Irish soda bread has become to the go-to recipe over here. It's easy, flexible, and it turns out you can substitute kefir reasonably well for buttermilk (if you happen to live in a place where kefir is more accessible).
I'll admit though, this is what looks like the final stretch of a year-long project to get all the experimental flours out of there.
