Finishing projects and using (up) things for their intended purposes definitely counts as decluttering! It sounds like you've got an impressive amount of stuff done or in progress. And going through the puzzles seems like an excellent use of time when other leisure options are more limited than usual.
I'm still trying to work through my pile of to-be-read paper books (and e-books), watch my backlog of TV shows and movies, and make progress in the garden -- from planting seeds to removing weeds. Hmm, I also have papers to shred from next week (end of our tax year) so I can add that to my list.
